People are forever asking how I manage everything with such a busy schedule. I love to cook, but I don’t always have time to do so in the manner I would like. This weekly journal is a way to keep it real and show that while my intentions are good, sometimes life and all of its activities get in the way of serving a delicious, home-cooked meal and that it is perfectly okay.

  • Saturday: The ultimate #momwin tonight as Holly made dinner for us. Scrambled eggs, hash browns, pancakes, toast, and a tangerine for good measure. She wanted no help. It was lovely and sweet and delicious.
  • Sunday: It was my turn to cook for my darling daughter after her lovely dinner last night. I chose the vegetarian-friendly three-cheese ravioli with marinara sauce, Caesar salad, and garlic bread. None of it was homemade, but it was still tasty.
  • Monday: Jim’s jet lag was in full force tonight so he was completely uninterested in eating anything. Instead, Holly made herself a black bean taco with items we had in the fridge, and I had a simple sandwich.
  • Tuesday: On the one night when Holly does not have dance class, I do try to make a decent meal for her, one we can all enjoy. Tonight, I made bean enchiladas with Mexican rice. Jim was not thrilled with the lack of meat, but I do think it is important that we have at least one meal where we eat the same thing as she does. Bean enchiladas are so easy to throw together, and each person gets to personalize their own with various toppings. Plus, the combination of refried and black beans really is filling. And delicious because it is Mexican food and Mexican food is always delicious.
  • Wednesday: Last minute appointments before the weekend and general craziness with Jim’s new schedule meant no one was very interested in a real meal tonight. I stuck with leftovers, as did Holly. Jim wanted a bowl of cereal. To each his own, I guess.
  • Thursday: Holly and I were out getting last minute items for this weekend, but we came home to Jim having made sausage and cheese grits. Holly stuck with the cheese grits and supplemented with a fake meat patty. We are definitely not on the sexy food thing this week.
  • Friday: I can’t speak for Jim as Holly and I were in Des Moines relaxing before the competition started on Saturday. We ended up at The Cheesecake Factory, some place I have not been for over five years. We kept it surprisingly simple for the meal, not getting one of their gargantuan plates of pasta or anything, and I didn’t even eat my cheesecake that I took to go. The food is still delicious though, and I would go back in a heartbeat.
