What’s For Dinner – Week of 6 September

In an effort to be a whole lot more organized this year, and because everyone is always posting what delicious food they make, here is what I have been serving my family for the past week. I also envision this being a detailed account of how I fail miserably at meal planning when life gets too busy. But hey, it’s real life. Speaking of real life, I am not and never will be a food blogger. If I ever were to post food pictures for you, I apologize in advance for how awful they are.

  • Sunday: We ended up hosting a small get-together on Saturday night, for which I made too much food – something I do all the time. It makes the day after easier though, and Sunday was no different. Leftover brats made for a quick and easy dinner.
  • Monday: Monday was Labor Day. Labor Day, to me, means not working. Therefore, I kept dinner simple with delicious BLTs. Somehow, it seems a fitting meal for the last weekend of the unofficial summer.
  • Tuesday: I had plans and ingredients to make dinner tonight. I was even looking forward to it. However, when good friends invite us out to dinner, how can I say no? So, it was another trip to Red Robin for Jim and me. The kids made due with cereal and apples and sandwiches. Honestly, I think they enjoyed that more than what I was going to serve them had I cooked.
  • Wednesday: There was no cross-country and, more importantly, no dance tonight to prevent me from making a good meal for the family. I finally got around to making Spaghetti Carbonara (I said good, not healthy), which the whole family loved. I made a double batch, of course, and everyone was already calling dibs on those. It makes me happy when my family fights over my food.
  • Thursday: I knew tonight was going to be a busy one as Holly has three hours of dance, and Connor had a cross-country meet. When meal-planning this weekend, I was optimistic in my willingness and ability to cook a meal we could all eat at different times. Frankly, by the time I got home from the meet, Jim had already dived into the leftovers from yesterday. I did not hear any complaints from the kids either.
  • Friday: Our first football game where Connor has to perform at halftime with the marching band means a night where we are not back to the house until late. Thankfully, Jim had the foresight to grill a bunch a chicken this weekend, so we each ended up doing something different with them. Jim ate them plain. Holly made a sandwich, and I made nachos. Versatile, easy to prepare, and delicious.
  • Saturday: This afternoon, we have the annual block party to attend. As our turn as “hosts”, we are providing the meat and the beverages. That means a special slow-grilled chicken, brats, and burgers from us. What the rest of the block brings is anyone’s guess.
