What I Cook When I Have No Time to Cook

Whoops. Did I have a blog I was supposed to update? My bad.

I’m in a play again (see below for some sneak preview shots). Which means I am as time poor as they get. It’s not that I stop baking when I’m time poor, a woman needs to eat, I just reach for the classics instead of trying new recipes.

So I thought I’d share some of my staple go-to’s that I posted when I’m pretty sure my readership consisted of me, and my family members I made sign up.

Chocolate carrot muffins:

Heavy as a rich chocolate cake, RIDICULOUSLY low in calories. High GI (OK, I don’t actually know what that means, but with the oaty-carroty goodness I’m sure it is). I literally have one next to me as I type this.

ANZAC biscuits:

Spinach and feta muffins:

I usually devour one of these on the way home after rehearsals, and they’re super easy to make.

This time (unlike last time I was in a play and just put up an intermission post) I have proof that I’m in said play because another blogger (a lovely woman and photographer who blogs at Leanne Cole Photography) has been tracking the plays progress.

I’m the brunette doing a terrible job of blocking so you can only see the back of my head. Note to self: face audience.

She has been tracking the plays progress from the very beginning when we had scripts in hand, to the blocking and set starting to creep in, the set and wardrobe building days, and most recently as things are starting to take shape more. No costumes yet, that’s to come very soon.

We have rehearsals for two more weeks, and then the show runs for three weeks. I’ll try and remember to put up a link to her updates as I stumble through the next month, but you can see them all through her tag to ‘The Importance of Being Earnest’. For those who know the play, I have the role of Gwendolyn. It’s a hoot.

Next up though, blueberry lemon and cornmeal muffins. I’ve just made them and am so besotted I’ve been doodling pictures of them on my notebook. I feel far more comfortable blogging about food then my actual life, as most bloggers are aware it’s a very strange step out of the comfort zone of your usual style. More so than donning 1850’s costumes and pretending to be someone else for three hours.
