Wednesdays Unplugged - Sarah's Creamy Coleslaw

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

This last week before Thanksgiving has been an interesting one. We had our Hymnus Angelicus concert featuring the Faure Requiem... had several real estate transactions, then John and I planned to go up north to Bark Point but he got sick... I decided to to go anyway and had a wonderful time (including hanging out with Jane in her art studio and having lunch next to the northernmost post office in Minnesota!)... only to come home and have it my turn to get sick! Went to the Dr on Saturday and was officially diagnosed with Type A influenza virus... good news is there are drugs for that... now feeling much better although I don't sound great... heading to Bad Medicine Lake later today for a few days for family Thanksgiving.

RECIPE OF THE WEEK

Had this delicious cole slaw the first night on Bark Point last week with some fantastic turkey burgers. Will share the awesome turkey burger recipe next week, but this week we have their daughter-in-law's wonderful coleslaw recipe. Thanks, Sarah!

SARAH'S CREAMY COLESLAW

Coleslaw

  • 1/2 head green cabbage, shredded or thinly chopped
  • 1 carrot, grated
  • 1/2 red onion, thinly sliced

SAUCE

  • 1/2 - 3/4 cup mayo
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons sugar (or 1 to 1 1/2 teaspoons honey)
  • Pinch of salt

Place veggies in large mixing bowl. Make sauce by combining sauce ingredients in small bowl. Pour sauce over veggies and stir until thoroughly combined. Taste and adjust as needed.
