vengaya vadagam using left over rice recipe | leftover rice vadam recipe - making of sun dried left rice fritters is a common practice in south indian homes if we have left over rice. Without wasting the pazhaya sadam , they will make killu vadagam and preserve it to serve as a side dish.

The normal method of making vadagm (fritters) is using rice flour and it is a long process of boiling water and making koozh. If you want to make it easily, you can opt for this cooked rice vadam method.

I also added a tip of making the vathal without much sunlight. I kept it in the refrigerator on the first day to avoid spoiling the vadams. The next day it dried 50 percent. So we can keep it at room temperature. Dry for 3 to 4 days depending on the sunlight available in your place. After it is completely dried you can place it at normal temperature and use it regularly.

What can be made from leftover rice?

You can make lemon rice, puliyodharai, thalicha sadham or any other variety of rice recipes if you have left over rice. But you should make them on the same day itself. But if you want to make anything on the next day, you should soak the rice in water until the next morning and you can serve as pazhaya sadam, an age-old traditional south indian breakfast to be served with raw shallots(chinna vengayam) and green chilies. It's a perfect coolant in the summer. If you are not okay with that recipe and hesitate to catch cold, you can make fryums like vengaya killu vathal, or masala vathal etc.,

What can I do with small amounts of leftover rice?

Akki roti( rice bread) is a perfect choice if you have a small amount of leftover rice. You can make one or two rotis using a small quantity of rice and serve as an add on with your usual dinner or breakfast. You can serve with coconut chutney or tomato chutney.

Is it safe to use leftover rice?

Yes, it is completely safe to use leftover rice. But you should not place your hands on it. Any food will spoil if we put our hands in it. So you simply add some water to consume the next day. Don't use it more than one day.

how to make sandige with leftover rice:

  1. Soak if you have leftover rice in water overnight. Next morning drain the water completely and keep aside.
  2. In a mixer grinder, add 2 green chilies, as required salt and water drained leftover rice.
  3. Grind to smooth(koozh consistency) and transfer to a wide bowl.
  4. Add finely chopped shallots(small onions) and 1 tsp of cumin seeds(jeera).
  5. Mix everything well.
  6. Line a cloth or vadam sheet or butter paper in a wooden plank or on plates if you are making.
  7. Soak your hands in water and make vadams as in video and stepwise pictures.
  8. Place it in sunlight for a day or hours until sunlight is there in your place.
  9. After that, fold the sheet and place it in a tray or bowl, cover and keep it in the fridge.
  10. Next day, sadam killu vadam is again dry in the sunlight. If you are using cloth, remove the vadams from cloth by sprinkling some water. If it is a butter sheet, it will easily come off after you take it from the refrigerator.
  11. Dry the vadams completely , fry the rice crackers in oil and serve with your favourite recipes.
