Valentine’s Day Brunch Recipes

The gift of being pampered goes a long way and creates more memories than a material present. If you're looking to try something new this year, why not spoil your bae with a 3 course homemade brunch? My friends at Slimming World were kind enough to share these healthy yet satisfying recipes, so you can indulge with your other half without sacrificing health.

Valentine’s Day Brunch Recipes

Scrambled Eggs with Smoked Salmon

Preparation time: 5 minutes
Cooking time: 10 minutes
Total time: 15 minutes

Ingredients

(4 servings)

  • 8 large eggs
  • 3 tbsp water
  • 1 tbsp freshly chopped chives
  • Salt and freshly ground black pepper
  • Low-calorie cooking spray
  • 6oz smoked salmon
  • Lemon wedges and chive leaves for garnish (optional)
Method
  1. In a medium bowl, beat the eggs, water and chives, and season to taste with salt and pepper. Spray a medium ceramic or nonstick skillet with low-calorie cooking spray and place over medium-low heat. Pour in the eggs and cook, stirring frequently, until softly scrambled.
  2. Place a piece of smoked salmon on each of 4 plates and spoon the scrambled eggs alongside. Serve immediately with lemon wedges and chive leaves, if you wish.

Tip: Serve with halved cherry tomatoes or thick slices of beefsteak tomato.

Ham, Broccolini, Red Pepper Frittata

Preparation time: 8 minutes

  • Salt
  • 2 cups small pieces of broccolini or broccoli florets
  • 1 cup ½-inch pieces red bell pepper
  • 8 large eggs
  • 3 tbsp water
  • Freshly ground black pepper
  • Low-calorie cooking spray
  • 1 cup diced lean ham steak
  1. In a covered 10-in nonstick or ceramic skillet, bring ½ inch salted water to a boil. (Wrap the handle of the pan in foil if it's not ovenproof.) Add the broccolini or broccoli and bell pepper and cook until crisp-tender, 4-5 minutes. Drain. Rinse and dry the skillet. Meanwhile, in a medium bowl, beat the eggs and water and season to taste with salt and pepper. Preheat the broiler.
  2. Spray the bottom and sides of the same skillet with low-calorie cooking spray and place over medium heat. Pour the eggs into skillet. Stir in the ham and cooked vegetables and reduce the heat to medium-low. Cover and cook, shaking the pan to loosen the eggs at the bottom, and lifting the edges to allow uncooked egg to flow underneath, until the edges are set but the center is still somewhat loose, 6-8 minutes.
  3. Broil 3 to 4 inches from the heat source until the frittata is golden and puffed at the edges and the eggs are set, 3-5 minutes.
  4. Remove the frittata from the broiler and let it stand a couple minutes to finish the cooking. Cut into wedges to serve.

Tip: The frittata can also be served at room temperature, so it's great for a meal on the go.

Mocha, Vanilla, Chocolate cups

Preparation time: 15 minutes

  • 6 cartons (5.3oz each) Dannon Light & Fit Greek Nonfat Vanilla yogurt,

    or Activia Greek Light Nonfat Vanilla yogurt

  • 4 tsp no-calorie granulated sweetener

  • 4 tbsp strong black coffee, cooled

  • 2 vanilla pods, split lengthwise

Method
  1. In a bowl, stir together 2 of the yogurts, 2 tsp no-calorie granulated sweetener and all the coffee.

  2. Pour 2 yogurts into another bowl. Scrape seeds of one vanilla pod into bowl and mix well. Reserve pod.

  3. Pour remaining 2 yogurts into a third bowl and stir in remaining 2 tsp no-calorie granulated sweetener, the cocoa powder and seeds from second vanilla pod. Reserve pod.

  4. Divide coffee-yogurt mixture among 4 dessert glasses. Top with a layer of vanilla yogurt mixture; add a dollop of cocoa yogurt. Chill 1-2 hours.

To serve, lightly dust each with cocoa powder, then halve reserved vanilla pods to decorate (remove before eating).
