Sweeeeeet Potato.

Hey all! Its my official weekend. I have today and tomorrow off work, which is fabtastic.

This morning I ate my newest breakfast obsession… Trader Joe’s cinnamon raisin toast.

I think I need another piece now.

I like mine with just butter… it’s that whole sweet & salty thing. But I kinda think a pb&j with this fancy bread might be the BEST. IDEA. EVER. and is on my bucket list.

Last night for dinner I had a beer and a premade chicken verde burrito.

I ate this while building a wedding website. I can’t wait to have information on it so we can “go live”. Eeeee. Weddings are so much fun!!!

While writing this post I ate the most healthy lunch in the history of lunches…

Are you impressed? I am!

I baked a sweet potato for about an hour and a half at 350 degrees. I topped it with a TBSP of butter, salt and pepper.

I also made a chicken arugula salad with honey-lemon dressing.

I sort of eat a baked sweet potato for lunch like most days of the week… maybe I’m in a rut? I don’t know but I think they taste delicious!

I LOVE ARUGULA! Why is it so peppery tasting? I don’t know and I don’t care. Give me MORE!!!

I topped my salad with a heated up frozen chicken tender and some lemon-honey dressing: just mix 1 T evoo with 1/2 T honey and the juice of half a medium lemon. Add salt and pepper to taste. 

On Weddings and Weight Loss…

I think most people want to cut a little dough for their wedding. It’s normal. I know I’d like to loose a few of those extra cookies I’ve put on through the stresses of moving, losing my dream-job, and starting a new life with my boys in Sausalito.

I am going to count a few calories, try and eat more nutritiously and smaller portions. But what I’ve learned since last year is that I gotta live life. Right now. I’m going to get married no matter if I’m 150 pounds or 175. And you know what? I’ll be the same person that day no matter where I happen to fall on the scale that morning.

The main point is that I don’t want my wedding planning and anticipation to be all about “how I’ll be skinny that day” or anything. I will make a few lifestyle changes to help, but I am who I am and I’m getting married! Let’s live in the moment and cherish every little tid-bit of the process.
