In honor of Earth Day, we are serving up a few tips on how you can minimize your event’s environmental footprint.

1.  Source Locally-You might have to put a little leg work into determining what produce is in-season at your local farmer’s market, but this is the best way to contribute to the green initiative while planning your menu .  Shipping methods cause pollution any which way you slice it, so even though it is possible to get these items from other countries, it is not the most conscious.  (See our previous posts on shopping seasonal produce here).  Shop organically if you can and consider organic wines and beers for your bar (start with the local brewery or vintner).

2.  Stem to Root- This is a huge movement we are seeing in the catering world.  Professional kitchens all across the world are implementing zero-waste policies which advocates use of an entire plant, in turn reducing waste and improving food cost.  Try to contribute at home by composting rinds and peels, but if you really want to follow the stem to root initiative, utilize those carrot greens as garnish or grate citrus rinds to impart flavor while cooking.

3.  Minimize Waste-Instead of utilizing plastic plates, cutlery and cups at your event, the greener option would be to use tableware that can be washed and re-used.  If you must use disposables, consider biodegradable items.  Historically, these items are not the most attractive, but there are plenty of new options on the market!   Instead of offering individual water bottles (which in our experience, get thrown out half-full), put out a beautiful beverage dispenser with ice cold water and a variety of sliced citrus fruits, berries and cucumbers.  Guests will enjoy making their own infused waters and you are also minimizing your event’s impact on the earth.  Rather than using cut flower arrangements, utilize potted plants and living flowers, which can also double as a favor.

4.  Recycle-Recycling really has become mainstream, and especially here in California, we are used to seeing separate recycling containers next to the garbage in public.  Promote recycling at your event by putting out a separate container for plastic, aluminum and biodegradable paper products.
