Birthdays come and birthdays go. But this one is so special. Someone's turning One today! Guess who?

Hurray! It's Ginger-it-Up's 1st Anniversary !

My baby blog turned 'One' today. The baby phase is going to be over. This is going to be the upcoming 'Toddler' year for my baby blog. I am so proud of you my baby.

Exactly one year ago, on the 16 th day of September, 2015, I was hitting the 'publish' button for the first time. I didn't have any idea what I am doing? I'm happy that I pressed that button. I'm happy that I took this step, and hopped into a world that I knew nothing about.

I didn't have a clue what I was doing when it came to blogging. I just knew that I can cook some nice recipes and write some good words and thoughts. I also knew that I hate to waste time. So, wanted to utilize each bit of my time into something meaningful. Cooking and writing being my two passions gave me a direction to move forward with my blogging. I have been very health conscious from past couple of years and trying to follow a good lifestyle and eating habits.

Going by this, I realized that I loved cooking the healthy and easy recipes for my family and loved writing about the health benefits of the ingredients incorporated into those recipes.

The moment I started to write about these topics along with some social issues and motivational quotes, the blog started to take on a life of its own. I always wanted to be a writer but don't know why I didn't pursue that as a career. But, writing has been a constant hobby for me since my middle school days. I wish to publish a book of my own someday. I wish, I do!

The first blog itself was a point of motivation to proceed further. Within days, it got published in "The India Daily". Then, it became like a pattern. With so many write-ups getting published on news platforms like Oximity News, Criticl News and Media House, Huffington post, TheNeeds etc., gave me a confirmation of being on the right track and work harder.

Thanks to all the family members, friends and readers who became a part of this beautiful journey of "Ginger-it-Up" by reading, appreciating and sharing the content. A very special thanks to the tech team of ginger-it-up at LinkLoops who helped me design this website and provided immense support even at midnights. I highly recommend Linkloops to the people who are looking for help with the website design. I can vouch for their great customer service. Many thanks to all of you. Without your interest and support, Ginger-it-up wouldn't have succeeded during its baby phase.

I started Ginger-it-up on a WordPress blog platform and continued for 5 months. My little pumpkin Nysa was just 6 months old when I started this blog. I still remember that day. It was the auspicious day of Ganesh Chaturthi. I was nursing Nysa and thinking what could be done during those long nursing breaks as I hate to waste time. I had my iPad lying next to me. I opened a notepad and started writing about Ganesh Chaturthi. It was then I thought of making Kalakand for puja and as an offering to Lord Ganesha. So, the two things (kalakand recipe and Ganesh Chaturthi write-up) together became my first blog. Since then, I always carried my iPad for collecting my thoughts while feeding my baby. So, time put to good use in that way. 🙂

Slowly my blog started gaining popularity among family, friends and a few readers outside of my social circle. It was almost 5 months into the blogging journey and I launched my own website. Moving from a blogging platform to my own website was a great feeling.

This beautiful journey of one year has taught so many new lessons that I had never experienced before. I never thought of clicking a professional food photograph. My first blog's picture was just an ordinary one. I feel happy to see the great improvements in my photography skills. A food blog is more than a good recipe. It's about a good caption with an inviting food-presentation and a great photography.

Apart from these skills, I learnt technology and social media. I knew nothing about the power of social media. But, my blog, gave me an opportunity to learn how social media works and makes you popular and indexes you in the google top hits. 🙂 Thanks to Twitter, Instagram, Pinterest, Facebook and many more social media platforms.

It's a great feeling to achieve all these things. And certainly, there are lots of new things which are yet to be explored.

I had been contacted by a lot of Ad-agencies for placing the ads for some big companies on my site and thus earn money. Monetizing was not the purpose behind my blog during its baby phase. According to me, there's always a right time to do certain things. I think, monetizing my blog is going to be the agenda for the coming year along with sharing the good content with the readers. There's no harm in learning money making tactics as well. 🙂

So, once again, Thank You, so much to all my subscribers and regular readers, for their time spent in visiting and reading my blog, trying out my recipes, and leaving the lovely comments and feedback along the way. My readers have encouraged me to progress further and improve Ginger-it-Up!

So, today as I celebrate my baby blog's first birthday, I share the recipe for the Eggless Chocolate Mousse. It's a very easy recipe with just 3 ingredients. So, try this one and let's Ginger-it-Up together on my blog's first anniversary.

Super Easy Eggless Chocolate Mousse

Serves 4-5

12 oz. Hersheys(or any brand) Special Dark Mildly sweet chocolate chips

12 oz. Sweet chocolate mini morsels

500 ml Heavy whipping cream

2 tbsp. Vanilla Essence (optional)

Honey as per taste

Methods:

Super Easy Eggless Chocolate Mousse
  1. Mix both the chocolate packs in a glass bowl.
  2. Place the glass bowl on top of a double boiler to melt the chocolate. You can even melt the chocolate in the microwave on high settings for 45 secs. Keep stirring. Don't overheat. Let it cool to room temperature.
  3. Take the heavy whipping cream in a stand mixer,add vanilla essence and honey and whip it at slow speed till the soft peaks appear. You can even use the hand whisk.
  4. Now, take half of the whipped cream and fold it nicely with the melted chocolate. Don't beat it. Make sure to fold it with gentle hands.
  5. Take rest of the whipping cream and fold it again with the chocolate-cream mixture gently and completely unless a smooth creamy texture is achieved. Your chocolate mousse is ready and would set firm once refrigerated.
  6. Take a ziplock bag and fill it with the mousse.
  7. Fill the mousse in the serving bowls with the help of ziplock bag and top it with a spoon of whipped cream, some mini chocolate chips and hazelnut.
  8. Keep it in the refrigerator for around 2-3 hours to set it firm and serve.
