Summer Fruit and Yogurt Popsicles

Blogging Marathon# 54: Week 3/ Day 3 Theme: Kid's Delight -- Cooking from Kid's Books/ TV shows Dish: Yogurt & Summer fruit Popsicles For the final day of this week's BM, I made these colorful and delicious fruit & yogurt popsicles. Since this is for Kid's Delight: Cooking from Story books/ TV Shows, being hosted by PJ, this recipe is from one of my son's books, Black Lagoon adventures.
Strawberry Yogurt Popsicles The main character in the book starts a popsicle business in his neighborhood during summer vacation. But no one comes to buy them and the popsicles melt away into a puddle. He then decides to start lemonade business instead. I think this is were my son got the idea to start a lemonade stand. He bugged me for a long time to make lemonade, so he can open a lemonade stand in the front yard.
Strawberry Yogurt Popsicles These popsicles are made with yogurt and fruit. Recipe is from Vegetarian times magazine. They are very quick and easy to make. Just grind all the ingredients and pour into popsicle molds.
Corn syrup keeps these simple treats from developing ice crystals or freezing into blocks. Feel free to play around with the fruit combinations. My son wanted mango and my daughter wanted strawberry, so I made 2 batches - one with mango and 1 with strawberry. Both the kids loved there yummy summer treat. Mango Yogurt Popsicles
Mango Yogurt Popsicles Ingredients: Makes 6~8 popsicles Low fat Yogurt - 1cup (I used 2% Greek Yogurt)
Fruit of Choice - 1cup (mango, strawberry, pitted cherries, other berries are all good options)
Vanilla extract - 1tsp
Light corn syrup - 2tbsp
Fresh Lemon juice - 1½tsp
Sweetener of choice (agave, honey etc) - as needed (optional)
Method:
  • Place yogurt, vanilla, lemon juice, corn syrup and ½cup fruit in blender or food processor and puree until smooth.
  • Add remaining fruit, and pulse 3~4 times or until fruit is broken down into small pieces.
  • Pour mixture into frozen pop molds. Place top on mold, if you want to insert a wooden stick, then wait for 1~2 hours, then place the stick into the popsicle -- this way the stick will stay in the middle of the popsicle instead of moving to the side.
  • To unmold, simply place the mold in warm water for a minute and enjoy the refreshing treat!!
