Strawberry Longcake

Stawberry Longcake? Nothing simpler. Think of it as shortcake on steroids.

Start with a double batch of the shortcake recipe on the Bisquick box. Spread it into a long log on a baking sheet. Use a spatula to make it as even as possible.  Smooth out spikes in the dough. Sprinkle the top with course or raw sugar.

In the Bisquick box recipe the cakes are baked for 10-12 minutes at 425º.  Since a larger cake takes longer, bake at 400º for 17-20 minutes. Test it for doneness with the toothpick method: when a toothpick inserted into the thickest part comes out clean it’s done.

Let cool, carefully transfer to a serving platter. Use a serrated knife to split it in half horizontally, then proceed with the layers of whipped cream and sweetened strawberries. Brown sugar makes for a delicious syrup when sprinkled over the sliced strawberries and left to sit for 10 minutes or so.

Add some blueberries or sliced peaches to make this dessert even more memorable. It’s an opportunity for more praise.

Serve immediately. Leftovers kept in the fridge overnight make for one delicious mess for breakfast. It’s a wickedness that would shock responsible parents and nutrition advocates, making it even better.
