Strawberry Crumble Tray Bake

Strawberries… strawberries everywhere! I just love having the season of my favorite berries in our own garden. There are enough strawberries to pick a basket full everyday! So this amount of harvest needs creativity, we already made 20 glasses of jam like every year. This weekend I about madea strawberry cheesecake and this delicious crumble cake! The cheesecake tasted amazing, for which I used Topfen curd cheese, lots of lemon and pureed strawberries. Somehow the consistancy wasn´t right, that´s why I didn´t take any pictures. Although I added 6 leaves of gelatine and kept it cool, it was a little bit too runny. Do you have any advice?? Anyways this post should be all about this crumble, moist and delicious dough, sweet strawberries and a crunchy taste of cinnamon streusel…!!

This is what you ill need

for the streusel

  • 113g butter melted
  • 150g brown sugar
  • 1/4 tsp. salt
  • 160g flour
  • 1 tsp. cinnamon

Combine sugar, salt, cinnamon and flour in a bowl. Add melted butter and stir using a fork until dry mixture turns moist and streusel are formed.

for the cake

  • 400g strawberries, sliced
  • 2 tbs. brown sugar
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 2 tbs. sour cream
  • 170g butter
  • 1 tsp. vanilla
  • 340g flour
  • 125g powdered sugar
  • 3 eggs

Combine sliced strawberries with 2 tbs. of sugar in a bowl and set aside. Mix butter, vanilla and sugar until creamy. Add eggs and sour cream. Mix in flour, salt and baking powder. Elapse mass on a parchment paper covered baking tray. Spread strawberries on top and evenly top with streusel. Bake in oven at 175°C for 30 minutes or until streusel and dough turns golden brown. Let tray bake cool out completely, then cut into squares and serve.
