St. Patty’s Day Peanut Butter Brownie Bites {Vegan & Gluten Free}

Who doesn’t love Peanut Butter? How ’bout if you wrap Peanut Butter Cookie Dough {minus the eggs of course!}, in a layer of Vegan Brownies and dip it in Dark Chocolate? With a little bit of green food coloring mixed in, you have the perfect Saint Patricks Day Treat!

Saint Patrick’s Day Peanut Butter Brownie Bites

Ingredients for Peanut Butter Dough:

1/3 Cup Earths Balance {or Butter}

2/3 Cup Coconut Sugar {or any other sweetener you prefer}

1 t. Pure Vanilla extract

1/4 t. Salt

1 Cup Peanut Butter

1 Cup Oat Flour {or any other flour you prefer}

2 T. Almond Milk

Green Food Coloring

Combine all ingredients in a bowl except food coloring. Add food coloring last {I used the generic green food coloring from the super market… for an all natural food coloring use this}. Stir until completely green. Roll into 1/2 inch size balls. Place on waxed paper or silpat mat. Place in freezer while brownies bake.

Ingredients for Brownies:

1 Cup Hersheys Cocoa Powder or any other 100% Cocoa Powder not containing milk

1/2 C. Earths Balance {or butter}

1 C. Coconut Sugar {or any other sugar you prefer}

1/2 t. Salt

1 t. Vanilla

2 Large Flax Eggs {or 2 regular eggs if you aren’t vegan}

1/2 Cup Oat Flour {or any other flour you prefer}

Place all ingredients in a separate bowl. Stir until combined. Grease an 8×8 baking dish {I use Coconut Oil}. Spread evenly in greased baking dish. Bake at 325 for 10-12 minutes until a fudge like consistency. If they crack around the edges you have cooked them too long as they will not adhere to the peanut butter they will just crumble off. Once they are done baking, let cool down until they are cool enough to handle.

While the brownies are cooling melt the chocolate bars for the coating.
Chocolate Coating:

2 Chocolate Bars plus 1 Tablespoon of coconut oil.

Break into pieces and then melt in a double boiler {or microwave stirring periodically}. {Here is a list of amazing Vegan Dark Chocolate}

Once the brownies are cool enough to touch pull off a small piece and flatten it into your hand as pictured below, adding more to it until peanut butter ball is completely covered in brownies. Place them in the freezer as you go. Once done wrapping all of the balls in the brownie layer then take a spoon and drop one peanut butter ball into the melted chocolate at a time, rolling it around in the chocolate until completely covered. Use a spoon to remove from the chocolate letting any remaining chocolate drip off. Place back on silpat mat and let solidify in freezer for 30 minutes.

Store in refrigerator until they are all gobbled up!
