I have four different variations of hummus on this site, and I thought maybe it was time to branch out.
This time, I actually didn’t have dip in mind…I just wanted something spinach and artichoke. I tried making one-pot pasta with it, but it was way too rich. I considered making a grilled cheese sandwich with it, but Google told me it had been done many other times.
Finally, I considered whipped feta…but as a dip. With spinach and artichokes. And it turned out perfectly the very first time I made it! Third time’s a charm!
