Spicy Black Bean Burger

Black Bean Burger
This is one of my favorite recipes given to me by my co-worker last year.  I have made it, probably too much since then.  A healthier way to enjoy a “burger”.  It feels indulgent and you won’t miss the meat at all!  It is full of fiber to help keep you full longer and tons of fresh ingredients great for spring and summer.  I won’t say this is a quick and easy recipe, just because there is a lot of chopping involved, exactly what I love to relax me at the end of a long work day.

Shown above are the ingredients to make the spicy black bean burgers.  Here is a list with quantities:
  • Whole wheat buns
  • 4oz Chipotle Cheddar Cheese (my absolute favorite)
  • 1 Tbsp ground cumin
  • 1 Tbsp chili powder
  • Pinch of cayenne pepper (optional)
  • 1/4 cup bread crumbs
  • 1 can black beans  (mash 1/2 & add 1/2 whole) – rinse to reduce the sodium
  • 1 egg
  • 1/2 jalapeño (more or less to taste)
  • 1/4 cup minced onion (optional)
  • 2 cloves garlic
  • 1/4 cup cilantro
  • 1/4 cup finely chopped bell pepper (any color will do)
  • Salt to taste

Start chopping all those veggies!  Mix all the ingredients in a bowl and shape into patties (will make ~4 burgers).  Preheat pan on medium with cooking spray, brown on both sides.  Toast buns if desired.  I love to serve mine with my own concoction of an Avocado Bean Dip.  Stay tuned for the recipe next week!
