Soft, Gooey Cookies

So I am currently in the middle of my exams, and we all know we need a little treat to get us through these difficult times. Also I love baking.

This recipe made loads, it made 30 cookies, which is way too many so it you want less just halve all the quantities.
First of all just give all the wet ingredients and sugar (butter, egg, muscavado sugar and caster sugar) together until they are well combined. Then add in the dry ingredients. I added in the flour a bit at a time because it didn't want it to fly everywhere.

You should end up with quite a sticky mixture, which is unusual for cookies/biscuits but it works well.

Line your baking tray with greasproof (I gave mine a light spry of fry light just to make the cookies even easier to remove) and plop on about a teaspoon and a half of mixture. You don't need to flatten them just leave them in a little ball of deliciousness. Pop them into an oven (180 degrees c) for 8-12 minutes.

In the oven they melt to form a cookie shape (is there such thing?)

On my last tray they all kind of stuck together but it doesn't matter because they taste just as good.

Voila yummy cookies, similar in style to Millies Cookies.
