Smoked Salmon with Potatoes

With all the entertaining we have done over the past few weeks I wanted to come up with some new appetizers that we different than the things I usually serve. This one was a big hit and even the kids were eating it. I was impressed they were willing to try something so grown up!

 

This is an easy to make before a party appetizer so you can concentrate on guests when they arrive and it just so happens to be gluten free!  Simply roast some potatoes, top with a dollop of sour cream or crème fraiche and top with a few capers.

Smoked Salmon with Potatoes

Cook Time: 20 minutes

Ingredients (serves 24)

  • 12 baby potatoes, halved lengthwise or cut into quarters if too large
  • 1 1/2 tablespoons extra-virgin olive oil
  • 4 ounces thinly sliced smoked salmon
  • 1/2 cup crème fraîche or sour cream
  • 1 tablespoon capers
  • Salt/Pepper

Instructions

Preheat oven to 425.

On a cookie sheet place potatoes and drizzle with olive oil and salt. Cook for 20 minutes, until browned.

Let the potatoes cool.

Top each potato with a slice of salmon, sour cream, a caper and sprinkle with pepper.

Serve immediately or refrigerate.
