Sesame Pork with Bok Choy

I often sing the praises of pork tenderloin, so affordable and easy to cook. Grill it, roast it, sauté it or throw it in a stir fry. It happened to be on sale this week for $5 a pound. I call that a pretty cheap dinner!

 

Now pair that pork tenderloin with Asian flavors of sesame oil, soy sauce, ginger, and bok choy. It was a darn delicious meal. Way better than any take out. I promise. But about that bok choy? It was hard to find and we will forever remember it as that one time that I spent $7 dollars on a bok choy at a grocery store because I didn’t realize it was $2 a pound versus $2 for the produce. Seriously $7 dollars? I almost considered taking it back and finding a smaller one but that felt like a lot of effort. So I left the grocery store with a giant bok choy that barely fit in our fridge.

 

The one negative about this dish. You dirty a lot of pots and pans. Sorry! Clean Eating inspired it and apparently I didn’t realize that the five steps involved quite so many dishes. My apologies, but the flavor is worth it.

Sesame Pork with Bok Choy

Ingredients (Serves 4)

  • 8 ounces whole wheat noodles (spaghetti or fettuccine)
  • 1-2 tbsp dark sesame oil
  • 1 lb pork tenderloin, sliced into small pieces
  • 1 lb green beans, trimmed and cut into 1 inch pieces
  • 1 lb bok choy with stems and leaves chopped
  • 1 clove garlic, finely diced
  • 3 green onions, finely diced
  • 2 tbsp soy sauce
  • 1 tbsp ground ginger
  • Pepper
  • 2 eggs, beaten

Instructions

Bring a large part of water to boil, cook the pasta according to directions and add green beans with only 4 minutes left. Drain both and set aside.

While the pasta is cooking heat a large skillet with dark sesame oil, add pork and cook 4-5 minutes.

Add in bok choy, garlic, green onions, soy sauce, ginger and pepper. Cook for 3-5 minutes until everything is cooked through.

While the pork is cooking, heat a small skillet and add eggs. Cook and break up into small pieces.

Add the eggs, noodles and green beans to the pork mixture. Stir to combine and top with sesame seeds and serve.
