Savvy’s Sibling Strawberry Rhubarb Jam

This recipe might seem random, but my brother showed up at my mom’s house with this stuff a few weeks ago. After I got over the shock of finding out that he could a) cook and b) knew what a rhubarb was, I gave his jam a try. It’s delicious! I’ve put this stuff of everything! Sandwiches, yogurt, ice cream, even in my new favorite Overnight Oatmeal. He finally gave me the recipe. enjoy!

Savvy’s Sibling Strawberry Rhubarb Jam

Ingredients:

  • 2 c. sliced rhubarb
  • 1/2 c. water
  • 1 box powdered pectin*
  • 5 c. sugar
  • 1 1/2 c. crushed strawberries

 Directions:

Combine rhubarb, water and pectin and mix well. Cook 5 to 6 minutes until rhubarb is tender and pectin is dissolved, stirring twice. Stir in sugar, continue cooking until mixture boils stirring after each minute, about 3 minutes. Add strawberries. Mix well. Ladle into jars. Let stand at room temperature until set. Store in freezer. When ready to use, transfer to fridge and let thaw.
