Rice Kheer - Chawal Ki Kheer

Rice Kheer or popularly known as Chawal ki Kheer is a classic Indian dessert recipe. This is a basic Indian dessert which is made in every part of the country. It is made as a part of Festival food or you can make it to satisfy your sweet buds. With very few ingredients you can make this. 
Rice Kheer - Chawal ki Kheer
Servings : 4 persons
Preparation time (for soaking rice)  : 30 mins
Cooking time : 15-20 mins

Ingredients :

Milk : 1 kg

Rice : 50 gms
Sugar : 75-100 gms
Saffron : a pinch
Cardamom powder :1/8 tsp
Almonds (Chopped) : 1 tbsp
Pistachios (Chopped) : 1 tbsp
Raisins : 1 tbsp
Chiraunji nuts : 1/2 tsp

Method :

1. Wash rice, changing water until the water appears clear. Soak rice in clean water for about 30 minutes.

2. Boil milk in a deep bottomed pan, boil it till it reduces to 3/4th. 
3. Add rice to the milk and stir it continuously for about 10-15 mins or until rice is cooked. Cook it on low flame so that it doesn't get burnt.
4. When rice is cooked, add sugar and stir it for 5 minutes or till sugar gets dissolved.
5. Mix saffron strands in a few drops of milk and add it to the above mixture (step#4).
6. Add cardamom powder, pistachios, almonds, chiraunji nuts and raisins. 
7. Garnish with almonds, pistachios and chiraunji nuts.
8. Serve hot or cold. 
Handy Notes :

# You can add dry-fruits according to your taste and preference.

# Adding saffron milk gives a lovely aroma and color. 
# You can serve it hot or cold. Some people prefer it cold, refrigerate it when it cools down.
