I picked up this Tesco Healthy Living Chipotle Chicken & Red Rice Salad using some vouchers sent to me by Tesco's PR people so that I could try some products from the new Healthy Living range. The great thing about this new range is that there are 2 options; "Big on Taste, Low in Calories" with has products for those looking to lose weight and "Beautifully Balanced" which is designed for people maintaining their weight or just looking to make healthier choices.
This salad is from the Beautifully Balanced option but like the other products that I have reviewed this week it has the Weight Watchers ProPoints on the back. There are 9 ProPoints in this 271g pack and 333 calories. It can be found in the sandwich section at the front of the store and costs £3.00.
The salad actually contains red and white rice, along with chipotle chicken and vegetables in a spicy tomato dressing. It also comes with a pot of sour cream and lime dressing and of course a little fork to eat it with.
It's a lovely colourful salad and smells quite spicy. It's a good thing that I ate it at home and not in the office because I am not sure that my colleagues would appreciate the smell because it really does smell strong, I could smell it before I had even opened the box! It didn't put me off though because I love this sort of thing, especially anything involving chipotle.
It was absolutely packed with flavor and I thought that the mild sour cream dressing was an excellent accompaniment to the spicy chicken and vegetables. It has a nice heat to it and the chicken was good quality too, no ropey bits at all. Best of all was that it was really filling!
VerdictA delicious lunch with a Mexican feel to it which made a lovely change from the usual boring sandwiches and salads that I have to choose from if I am getting lunch on the go.
