Review – Chimayo Mexican Grill Keystone Colorado

When Lauren and I travel we make it a point to always look for places that are off the beaten path. This holds especially true when we are looking for somewhere to eat. We normally look for a locally owned non-chain restaurant to ensure we are giving back to the community. While visiting Keystone, we found Chimayo Mexican Grill, and felt like it was good enough to review and share with the world.

You’ll find Cimayo in the small resort town of Dillon about 6 miles outside of Keystone tucked into a shopping plaza. While it looks unassuming from the outside, we decided to give it a shot. Who knew we’d be walking out raving about the best Fish Tacos we’ve ever had! When we first walked in, we were immediately greeted by the smell of the deliciousness of meat and spices being cooked. We got to the counter and the staff were friendly and informative. Everything is made to order and you can customize it with a variety of toppings and salsas. I ordered the Fish Tacos and Lauren went for the Guacamole burger.

I ordered my tacos with a mix of the corn and spicy salsas. I’m a big fan of heat so I also ordered some extra spicy salsa on the side. In addition to the salsa they come drizzled with a popular and secret white sauce. The portions are generous. Mine came with 3- soft tacos, which is handy because Lauren and I normally share what we eat. The food arrived at our table hot and fresh. I took one bite and I was hooked! The lightly fried Alaskan Pollock was crisp and tender and blended very well with the flavorful creamy white sauce. My first thought as I chewed my food was “I don’t want to share”

Tacos from Heaven

As my thoughts of food hogging were running through my head I took a look over at Lauren’s guacamole burger and quickly (and selfishly) changed my mind. Funny thing is she had the same look in her eye, she didn’t want to share either! Her burger looked really good!
Her burger was cooked to medium well, topped with a layer of pepper jack cheese and then generously smothered with their house made guacamole. Lauren also added the hot salsa to her burger to spice it up a bit. After we grudgingly, shared our food I can tell you that the guacamole burger was definitely worth trying. Many times when you go off the standard fare of a restaurant you put yourself at risk of having mediocre food, but that was definitely not the case here.

The atmosphere was casual and it’s a great place to stop for lunch or an early dinner. Chimayo also offers a large variety of gluten free and vegan choices. It’s for all these reasons that we strongly recommend Chimayo next time your in the Keystone area.
