Red Lentil Soup

Red Lentil Soup
IngredientsSplit red lentil (masoor dal),soaked - 1 cupBasmati rice,soaked - 1/4 cupOnions,roughly chopped - 2 mediumCarrots,roughly chopped - 2 mediumTomatoes,roughly chopped - 2 mediumBlack peppercorns, 8-10Butter - 1 teaspoonGarlic,chopped - 1 teaspoonCrushed red chillies - 1 teaspoonSaltto tasteMilk- 1/4 cupMint leaves,crushed2 teaspoons
MethodDrain the lentils, rice and put into a pressure cooker. Add the onions, carrots, tomatoes, peppercorns and mix. Add four cups of water and pressure cook till the pressure is released thrice (three whistles). Allow the mixture to cool. Transfer into a blender and grind into a fine puree.
Heat the butter in a non-stick pan. Add the garlic and sauté till well browned. Add the puree, crushed red chillies, salt and milk and mix well. Add water if you feel the consistency is too thick.
Serve hot garnished with mint leaves.
