Recipes for Free: Strawberry Coconut Hot Cereal

cream of rice What’s not to love about the addition of fresh strawberries and coconut added to your hot and toasty cereal. Hot cereal (the breakfast of champions) of any kind rice, oats, quinoa is my favorite breakfast in the spring, summer, winter ,or fall. Strawberry Coconut Hot Cereal
3/4 cup Bob’s red mill mighty tasty hot cereal
1 tablespoon ground flaxseed
1/4 cup shredded coconut
1/4 cup dried cranberries
1/2 whole frozen strawberries
3 tablespoons coconut oil
5-6 drops pure stevia extract
2 tablespoons organic brown sugar
1/4 cup coconut milk
3/4 cup water

  1. Bring coconut milk and water to a rolling boil. Add hot cereal and reduce heat to a low simmer. Cook cereal on low heat stirring periodically about 5-6 minutes. Add coconut oil, brown sugar, and flaxseed as cereal begins to thicken, another 3 minutes. Add strawberries and cover with lid. Remove from heat after 2 minutes and allow to sit covered for 3 minutes. Transfer hot cereal to bowl; stir in cranberries and stevia drops. Serve hot.
