Roasted BeetsRoasted Beets serve as the base for this awesome Roasted Beet & Strawberry Juice. I know beets are typically the last vegetable you would consider to make into a juice but I promise you that this juice is simply wonderful. The addition of roasted strawberries, coconut water, and stevia extract round out the flavor and give it the body and sweetness it needs to be A+mazing!

Additionally, beets do the body good! Step outside your comfort zone and try this juice.

Roasted Beet & Strawberry Juice

Ingredients
2 cups roasted beets, approximately 3 fresh beets
1/2 cup roasted strawberries, chilled
1 1/4 cup frozen strawberries
1 cup coconut water
1 cup unsweetened almond milk
1 cup beet greens
1 1/2 cups filtered water
+ 5 drops stevia extract

Directions
1. Wash, peel, and slice 1 bunch of beets. Place in a single layer on parchment lined cookie sheet and roast in a 450 degree oven for 45 minutes or until beets are tender. Set aside and allow to cool for at least 2 hours.
2. Combine coconut water, filtered water, stevia, beet greens, roasted beets, roasted strawberries, frozen strawberries to a Nutribullet or Blender and blend until smooth. Juice will be on the thicker side. Add more filtered water if you prefer a thinner consistency.
