Chocolate and Guinness make these cupcakes moist and delicious. Ideal for a Father’s Day gift as well as to celebrate St Patrick’s Day.

Easy to make. These take around 15 mins prep as well as 25 mins to bake so a quick and simple present.

Ingredients

  • 250ml Guinness
  • 250g Butter
  • 400g Golden caster sugar
  • 2 Eggs large
  • 1tsp Vanilla extract
  • 140ml Buttermilk
  • 280g Plain white flour
  • 2tsp Bicarbonate of soda
  • ½tsp Baking powder
  • 3tbsp Cocoa powder
  • For the icing
  • 50g Butter
  • 300g Icing sugar
  • 125g Cream cheese full fat

Instructions

  1. Preheat the oven to 170°C (150°C fan, gas mark 3)
  2. Line cupcake tine with 12 cases.
  3. Pour Guinness into a saucepan.
  4. Add butter, heat gently and stir until the butter has melted.
  5. Remove from the heat and add the cocoa powder and sugar.
  6. Mix well.
  7. In a separate bowl add vanilla extract and buttermilk.
  8. Add this mixture to saucepan.
  9. Mix.
  10. In a large bowl, sift together flour, bicarbonate of soda and baking powder.
  11. Add saucepan contents to large bowl.
  12. Mix well using an electric whisk. i
  13. Spoon the mixture into the cupcake cases
  14. Bake for approx 25 mins.
  15. Remove cakes from the oven.
  16. Leave the cakes on a cooling wire to cool completely.
  17. Mix together the butter and icing sugar .
  18. Add cream cheese.
  19. Mix well.
  20. Spoon onto top of cakes.
  21. EAT!
