Mondays. Not the best day of the week by far. Surely even people who love their jobs don’t really like Mondays that much. The early start after a weekend of restful sleep, the to-do list ever-growing once again (or building on last week’s which didn’t get finished), the dressing smart (or reasonably), and having to choose what to wear super fast, and the feeling of always being switched on. Gosh, no wonder weekends are wished to arrive sooner! Mondays over the past couple weeks have been made worse by the weather, but I’ve found the perfect cure – a delicious dinner. Comfort food at it’s best. A delicious dinner, can turn an evening round, and make it seem brighter. That time spent in the kitchen…
