Recipe: Banana Cinnamon Overnight Oats

I first saw these now-famous overnight oats on Pinterest while checking out various recipe boards. When I became more active on Instagram, my feed was filled with colorful overnight oats. I think it’s safe to say that overnight oats has taken over the Internet. The question is why?

I’m an “oat-eater” myself since I was in grade school. My grandparents would rather feed me oatmeal than anything else. They say this super grain is very nutritious and a good source of fiber. It’s also good for the heart and helps lower bad cholesterol. So oatmeal became a staple in the kitchen.

In fact, it was my usual breakfast on school days and a snack during summer. My grandmother would surprise my palate and add some mashed and sliced bananas with honey or cinnamon. If strawberries are on sale or if a family member brought home strawberries, she would add it in.

Don’t Skip Breakfast

When I went to college, I’m 100% sure I wasn’t able to eat another bowl of oatmeal even an oatmeal cookie. I was always in a hurry especially when I started working.

Yes, we’re all busy with school or work. But sometimes we really NEED to stop and re-evaluate our life choices. When I saw those overnight oats on Pinterest and on Instagram, I realized this might be the solution. Breakfast is in fact the most important meal of the day and overnight oats is perfect. It’s healthy, delicious, and not time-consuming. You can even eat it on the go.

The only problem I encountered was the oats. I prefer cooked ones. But after some experiments and considering my grandmother recipes, I finally found what’s perfect for my taste buds.

Banana Cinnamon Overnight Oats

Here’s what you’ll need:

  • ½ cup rolled oats
  • ¾ cup low-fat milk
  • 3 tbsp Greek yogurt
  • 2 mashed bananas
  • cinnamon
  • pinch of salt
  • 2 tsp. chia seeds
  • Mason jar or bowl if you don’t have one

Simply combine all the ingredients in a bowl. Once mixed, you may transfer it in a jar and place it in the fridge overnight.

Note: If it’s your first time eating overnight oats, don’t worry. Since the oats are soaked overnight, it will absorb the liquid. So it’s very important to combine all the ingredients well.

In the morning, you can eat it as is or add some sliced bananas and additional chia seeds.
