Recipe: Avocado Toast w/Dukkah

Oh boy, oh boy, oh boy! I am finally sharing a “recipe” for avocado toast! Recently this snack has blown up on the internet. Why? Because it is delicious, easy to make, and nutritious. What a combo, am I right?

I have been enjoying avocado toast since college, but recently perfected it with the addition of one special ingredient: Dukkah. My cousin Melissa made David and me a spice jar of dukkah as a part of our wedding present. Let me tell you all… this may be my favorite gift of all, haha! I fell in love with this amazing spice concoction. It has added such great flavor to many of my favorite meals/snacks; the best being my avocado toast.

I will no longer keep you all waiting. Below is the recipe for my favorite snack ever: Avocado Toast w/Dukkah.

Ingredients:
Two slices of your favorite bread (I am a wheat bread lover)
Sliced Tomatoes
1/2 an avocado that is ripe for easy spreading
Earth Balance Coconut Spread
Dukkah (recipe for DOOkah listed below)
Salt/Pepper as needed.

What on earth is Dukkah? Simply put, it is a mixture of spices, herbs, and nuts. You can explore dukkah even more by clicking here. That link will describe the exact ingredients for you if you choose to make it yourself at home. If you prefer to buy it, check your local ethnic market.

Anyway, toast your bread slices. While the bread is toasting begin preparing your avocado. If you have never cut an avocado before, click here to learn the easiest way. You should only need about 1/2 an avocado for your toast (depending on the size). However, if you love the stuff, use the whole baby. I don’t mind.

Once your bread is toasted, grab the coconut spread and spread your desired amount on each slice. This is totally optional, by the way. I love the sweetness of the coconut mixed with the spice of the dukkah, though. Such amazing flavor!! Next, spread your desired amount of avocado. The riper the avocado, the easier it is to spread. Slice up some tomatoes (I recommend slicing with a serrated knife because it is easier), then place them on each piece of toast. Finally, sprinkle on your dukkah and enjoy. *Feel free to sprinkle salt and pepper to taste, too. It is that simple, folks.

You will LOVE this as a snack, breakfast, lunch, or even dinner. Personally, I love this as a meal for breakfast or a quick snack before heading out for the day. What is so great about this is that it tastes amazing ANY time of day. Please let me know what you think and happy cooking! <3
