Raw Avocado Chocolate Mousse With Crunchy Cereal Topping

Have you heard of good food karma, my gorgeous?

I love food that loves me back. I’m not a morning person, thus having the right breakfast food is no doubt the most important part of my day. As much as I adore sumptuous buffet breakfast served in hotels while I travel, I always bring with me a small pack of oats so that I can have nourishing breakfast on the go for a full day itinerary. I’m really lucky to have no major food allergy, however, over-indulging in bacon or sugary pancake stacks in the mornings tend to make me feel sluggish. That’s when I started to realize good food karma is physical as well as emotional – knowing for sure that I’m treating my body with a healthy morning feast makes me feel fabulous inside, and that shines from within to everyone else around you like a ray of golden sunlight!

This explains why my Instagram feed is constantly filled with colourful, cheerful and health-conscious breakfast inspirations. I recently came across this idea of replacing fatty cream with avocado for making the most decadent chocolate mousse. I then put on my creative hat to turn this super simple dessert recipe into a guilt-free breakfast parfait jar with crunchy cereal toppings and berries – now this is seriously NOM!

Ingredients

    Raw Avocado Chocolate Mousse Recipe
  • Mousse:
  • 2 ripe avocado, peeled and pitted
  • 1/4 cup raw organic cacao powder
  • 4 tablespoon organic honey
  • Pinch of Himalayan sea salt
  • Topping:
  • 1/3 cup multigrain & cranberry cereal
  • 1/3 cup organic coconut flakes
  • 1/3 cup sliced fresh strawberries (or whatever berries that are in season)

Instructions

  1. Add the pitted avocado, cacao powder, honey and sea salt into your blender.
  2. Blend until smooth and creamy and serve in a mason jar.
  3. Layer multigrain & cranberry cereal, coconut flakes and sliced strawberries on top.
  4. Refrigerate overnight or serve right away!

Notes

You can add a dash of coconut milk or soy milk to make the mousse blend more thoroughly.

This breakfast jar is packed with so much goodness and here’s why:

♥ Avocado: These wonderful fruits are such a treasure trove of nutrients – rich in vitamin C & vitamin E, strong antioxidant capacity, good source of fibre, great during pregnancy for developing foetus and help proetect your eyes (source here).

♥ Cacao: Raw cacao is full of flavonoids which act as natural antioxidants. The superfood is also a good source of sulfur for healthy nails and hair. Also found to help regulate blood pressure and reduce cholesterol while building the immune system (source here).

♥ Whole Grain Cereal: Not all cereal gives good food karma. Make sure you pick one that’s packed with fibre, no sugar and is free of nasty things such as GM ingredients, artificial colours and flavours.
