Raw aspargus salad with lemon & parmesan
This is an unusual but delicious way to eat aspargus, also works really well as a side dish for grilled fish.
Aspargus
Olive oil
Lemon
Parmesan
Salt, pepper
Thinly slice the aspargus lengthwise with an vegetable peeler, toss in olive oil and lemon juice, season with salt and pepper. Grate parmesan on top. Serve.
