When you think about eating healthy, Potato Bites with Creamy Mustard Herb Dip don't really come to mind, but the truth is that even when on a diabetic diet, there are plenty of toothsome choices to suit everyone's palette.

I got this recipe from the Two Step Diabetes Cookbook. It's a cookbook with tons of recipes so delicious that you'll forget you were even eating healthy! Some of them taste like they came from a restaurant, including the potato bites.

The cookbook has all different categories of food as well. From pork to beef to chicken to fish - it's all covered. Of course, there are also a lot of great dessert options. I don't know about you, but I'm suddenly very hungry for some healthy food! Here's the recipe for the potato bites.

  • ¼ cup mayonnaise with olive oil
  • ¼ cup light sour cream
  • 1 medium garlic clove, minced
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon Dijon mustard
  • For the potatoes:
  • 1 pound red potatoes, cut in cubes
  • 2 teaspoons canola oil (or you can use olive oil)
  • ¼ teaspoon sea sat
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon dried oregano leaves

First preheat your oven to 425º F.

For the creamy mustard herb dip, whisk together the mayonnaise with olive oil, light sour cream, garlic, dried oregano leaves and Dijon mustard, and set aside. For the best flavor, refrigerate for 1 to 4 hours.

For the potatoes, place your red potatoes in a medium-sized glad lock bag.

Then toss the oil, salt, pepper, paprika, oregano on top of the potatoes.

Now shake thoroughly until well mixed. Now arrange them in a single layer on a baking sheet and cook for approximately 15 minutes or until tender when pierced with a fork (or toothpick). Serve with wood toothpicks to pierce pieces and dip. Enjoy!
