Pepper’s Comforting Baked Apples in Custard Recipe!

Hello there beasties and beastetes!

I’m sure you know by now that I’m a sucker for all things in the way of British and comfort, food wise.
That means luscious fluffy potato with lumps of just-almost melted butter on top, Yorkshire puddings all crisp and voluptuous, stews and gravy, silky and full of flavor.

As for dessert, as much as cookies and cakes are nice, there’s nothing like a crisp rhubarb crumble cooling out of the oven or warm, just softened pears stewing in a little sugar.

Today though, I’m concentrating on apples, another classic fruit that seems to be a bit overlooked for other more “exciting” and “exotic” choices.

For my dessert, I wanted to taste all that lovely and sweet softened apple flavor but I didn’t want to spend too much time in the kitchen so a 45 minute crumble or standing over a pan of apples was a no no.

With that in mind I tried to create a one dish, no fuss, easy to make and quick to cook dish that would satisfy that sweet craving day in day out.

I came up with this baked apples in custard and I think it ticks all the boxes.
Comforting and warm, thick delicious custard, just enough for two over a romantic meal but can easily be up-scaled for more and it’s so easy.

The only down side is the apples come out a little on the ugly side, once you taste it though, you won’t mind.

You could experiment with this simple formula and add raisins, spice, maybe even some hulled cherries for the apple middles, go ahead and get experimental!

Pepper’s Comforting Baked Apples in Custard
Serves 2

Ingredients
2 medium sized apples
2 teaspoons brown sugar
1 tablespoon butter
385g full fat custard, tinned or home made

Method
Preheat the oven to 180oc (fan).

Wash and dry the apples then de-core both with a knife or apple corer.

Once the middles are hollow, score around the middle of each apple, not too far into the flesh.

Place the apples in a deep dish (a large pie dish will do) apart from each other.

Add a teaspoon of brown sugar to each apple middle then place in the middle of the oven for 10 minutes.

Remove from the oven, pour in the custard and let it fall into all of the space around the apples.

Add half a tablespoon of butter into each middle then place back in the oven for another 5 minutes.

Serve in the cooking dish or spoon out each apple in to the middle of individual serving bowls then spoon over the warm custard.
