Peachy Keen Smoothie

Summer is coming to an end! That means no more yummy stone fruits as the temperature starts to drop. And after all the labor day eating, BBQ-ing, and more eating, I was really looking for something light and refreshing to start my day today.

Luckily, I had a couple peaches left over from the farmer’s market (probably my last for the year!) so I thought I’d use them up in a smoothie.

My friend Sun created this recipe and let me tell you, it is delicious.

It’s a great way to use up remaining fruit, is super healthy, and takes only 5 minutes (or less) to make. Plus, for anyone who doesn’t like the texture of stone fruits (ahem, the husband), it’s a great way to add these yummy delights into their diet.

The Ingredients

  • 2 peaches (you can also use frozen peaches when summer is over)
  • 1 banana
  • 6-8 frozen mango chunks
  • 2 heaping spoonfuls of nonfat organic Greek yogurt (about 1/4 cup)
  • 1/4 cup freshly squeezed (or regular all-natural) orange juice

All you have to do is cut all of the fruit…

Dump it into a blender, and blend until fully combined!

It’s great as a mid-day snack, as a kid-friendly treat, as a replacement for juice, or even as a quick breakfast.

This recipe makes 2 generous servings, so find someone to share it with!
