Asian Beef Salad with Sesame Dressing

Salad is always a good idea for lunch, because it can be prepared ahead. The following paleo lunch recipe is made by marinating sirloin steak, then serving it on a bed of fresh vegetables, adding almonds for crunch and orange for a touch of sweetness, along with a ginger and sesame dressing to finish the dish off beautifully.

If you want to take this to work, you can prepare it ahead but keep the dressing in a separate container and add it just before eating. Feel free to tweak the salad, using any ingredients you want to add. You can also change the amount of red pepper flakes if you prefer a milder flavor.

The steak can be cooked on the grill or on the stove, or you could even make this salad using leftover steak from the previous day. This recipe makes 2 servings.

What You Need:

10 oz sirloin steak

1 oz shredded raw carrot

1 oz thinly sliced radish

1/4 thinly sliced red bell pepper

1/8 cup slivered almonds

8 halved grape tomatoes

1/2 peeled, chopped navel orange

1 1/2 cups baby spinach leaves

1/2 chopped green onion

For the Steak Marinade:

1 minced clove garlic

1/2 tablespoon minced ginger root

2 tablespoons coconut aminos

2 tablespoons fish sauce

1 teaspoon red pepper flakes

Salt and black pepper, to taste

For the Sesame Dressing:

1 tablespoon toasted sesame oil

1/4 tablespoon minced garlic

1/4 tablespoon minced ginger root

1/4 teaspoon red pepper flakes

1 tablespoon coconut aminos

1/4 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon sesame seeds

How to Make It:

Whisk the marinade ingredients together and pour the marinade over the steak. Let it marinate for 2 1/2 hours in the refrigerator then 30 minutes on the countertop. Grill or pan-fry the steak for 4 minutes per side or until done to your liking, flipping it once. Then let it rest.

Toss the carrot, radish, bell pepper, almonds, tomatoes, onion, orange and spinach together. Divide this between 2 serving plates. Slice the steak Slice the steak into thin strips and arrange it on top of the salad. Whisk the dressing ingredients together and drizzle the dressing over the steak salad just before serving.
