This is a staple Paleo Indian side dish to have handy that will go with absolutely any main meal. This versatile vegetable curry is also amazing as a standalone vegetarian main meal! Features a beautiful combination of Aubergines (eggplant), sweet potato, peas and tomatoes. MMMM

Paleo Indian Vegetarian Recipe - Vegetable Curry

Ingredients


  • 2 tbsp coconut oil
  • 2 x onions (sliced)
  • 2 x 3 finger pinches chilli powder
  • 4 x 3 finger pinches coriander powder
  • Small piece ginger (chopped)
  • 2 x aubergines (sliced)
  • 175 g peas
  • 125 g sweet potato (cubed)
  • 227 g tomato (canned)
  • 4 x green chillies

Method


  • Fry onions in oil till soft and golden.
  • Add Chilli, coriander, ginger, salt and fry for 2 minutes.
  • Add aubergines, peas, sweet potatoes and cook for 7 minutes, stirring.
  • Add tomatoes, chillies, cover and simmer for 30 minutes.
  • Serve and enjoy!
