How To Make Paleo Sweet Potato In A Yoghurt Gravy

A Paleo twist on the old classic Dahi Aloo which is a potato in yoghurt curry recipe that hails from the Punjabi region of India and Pakistan! I simply love the spiciness of the sweet potato that gets beautifully balanced by the creaminess of the coconut milk yoghurt! Great as a side dish or even a main vegetarian dish with some Paleo naans

Paleo Indian Vegetarian Recipe – Sweet Potato In A Yoghurt Gravy

Ingredients


  • 4 tbsp coconut oil
  • 1 onion (chopped)
  • Small piece ginger (finely chopped)
  • Small sprinkle of coriander seeds
  • 2 green chillies (finely chopped)
  • 750 g sweet potato (cut into pieces)
  • 227 g tomato (canned)
  • 100 g raisins
  • Salt
  • 300 g coconut milk yoghurt
  • Small amount of fresh coriander (chopped to garnish)

Method


  1. Fry onions and ginger in oil till soft.
  2. Stir coriander seeds and chillies and fry for a couple of minutes.
  3. Add sweet potato, cover, stir and cook for 5 minutes.
  4. Now add tomatoes (with juice), raisins, salt. Turn up the heat and cook uncovered.
  5. When liquid starts to evaporate, add half the yoghurt a tablespoon at a time.
  6. 20 minutes later, Add remaining yogurt, a tablespoon at a time then lower the heat and cook for a further 2 minutes.
  7. Garnish with fresh coriander, serve and enjoy!
