How To Make Chicken Molee

This is so easy to make and so delicious. I love the creaminess of the coconut infused with the garlic, chillies and lemon. mmm simply delightful!

Ingredients

• 3 tbsp coconut oil
• 4 chicken breasts cut into large pieces.
• Small sprinkle of cardamoms
• Small sprinkle of cloves
• Small cinnamon stick
• 1 onion (sliced)
• 2 cloves garlic
• Small piece of ginger (chopped)
• 3 green chillies (seeded)
• Juice of 1 lemon
• 2 x 3 finger pinches turmeric
• 50 g creamed coconut
• 150 ml hot water
• Salt

Method

1. Fry chicken in oil till slightly browned all over. Set aside using a slotted spoon.
2. Now fry cardamoms and cloves for a minute. Then add onion and fry till soft.
3. Blend together garlic, ginger, green chillies and lemon juice till you make a paste. Add this paste along with the turmeric and cook for 5 minutes.
4. Add coconut, hot water and bring to simmering point. Add chicken (set aside from before)
5. Simmer till meat is tender. This takes around 20 minutes.
