Paleo Dinner Recipes:

Roast Chicken with Garlicky Cherry Tomatoes

Everyone loves crispy, juicy roasted chicken, and this recipe is really good if you’re in the mood for that. We are flavoring the chicken with herbs and spices, then roasting it in a hot oven until done.

The side dish is made with tomatoes, mushrooms (or you can skip the mushrooms and just use tomatoes), garlic and basil, so you can expect an aromatic, highly tasty meal. This recipe serves 8 people but any leftover chicken can be chopped and refrigerated then used in future recipes such as salads, soups or our fav crunchy lettuce chicken wraps. The tomato side dish can also be reheated the next day or even served as part of a cold meat salad.

Ingredients:

1 whole chicken, about 3 lbs
1 tablespoon olive oil
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/8 teaspoon cayenne pepper
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper

For the Garlicky Cherry Tomatoes:

1 1/2 tablespoons olive oil
1 pint cherry tomatoes
2 cups button mushrooms (or just use extra cherry tomatoes)
Salt and black pepper, to taste
2 minced garlic cloves
1 tablespoon minced fresh basil

Method:

Preheat the oven to 450 degrees F. Rinse the chicken inside and out and pat it dry with paper towels. Put it in a baking pan and rub olive oil all over it, then combine the oregano, basil, cayenne, paprika, salt and pepper and sprinkle this mixture all over the chicken.

Roast it for 20 minutes, then reduce the heat to 400 degrees F and roast for a further 40 minutes or until the chicken is 165 degrees F inside. Let it sit for 15 minutes.

Now for the side dish. Heat half the oil in a skillet until it is almost smoking then add the tomatoes and mushrooms (if using) and grind in some salt and black pepper. Cook or 2 minutes, stirring often. Now you can stir in the garlic and keep cooking the mixture for another minute or 2, stirring frequently. Take the pan off the heat, stir in the rest of the oil and the basil, then serve with the chicken.
