Pork Chops with Baked Apples

Pork and apples have a natural affinity with one another. We are using center-cut pork chops in this recipe, flavoring them with smoked paprika and garlic, and then pan-frying them until juicy and delicious. The baked apples are filled with a sweet cherry mixture and these go perfectly with the pork.

If you don’t have a microwave you can bake the apples for 45 minutes at 375 degrees F, but microwaving is much faster of course. Cook the apples first, then let them cool a bit while you cook the pork. This is a quick and easy recipe for a busy weeknight.

PREP/COOK TIME: 25 minutes

Ingredients:

4 boneless center-cut pork chops
Smoked paprika, garlic powder, salt and black pepper to taste
2 tablespoons coconut oil

For the Baked Apples:

2 apples
2 tablespoons sugar-free dried cherries
1 teaspoon raw honey
2 tablespoons of water
2 tablespoons orange juice

Method:

Core each apple and cut them in half across the middle so you get 4 pieces. Simmer the cherries, honey, water and orange juice in a small pan for a few minutes or until reduced by about half.

Arrange the apples in a microwave-safe dish and spoon the cherry mixture into the middle. Cover the dish and microwave for 3 minutes, or until the apples are tender. Let them cool a little while you prepare the pork.

Grind some salt and black pepper over both sides of the pork and sprinkle over some smoked paprika and garlic powder. Heat the coconut oil in a pan and fry the chops for 3 minutes per side or until just white when cut open. If you have a meat thermometer, the pork needs to be at least 145 degrees F in the center.

Let the pork sit for 5 minutes to coax out the juices, then you can drizzle any juices over them before serving with the apples.
