Paleo No Bake Peanut Butter Cups

Peanut butter cups might sound like the most indulgent, unhealthiest treat there is but wait! Did you know there is a paleo version of this classic nutty snack? Cashew butter (stands in for our banned legume friend) and chocolate come together with coconut oil, coconut flour, honey and vanilla to make this decadent dish which is sure to satisfy your palate and your belly too. You need to make the filling first and then you can dip it into melted chocolate to cover and then chill until these little snacks are set and ready to eat. Chocolate and peanut are a wonderful pairing, so prepare them the paleo way for an unforgettable snack!

Ingredients:

¾ cup cashew butter
½ cup raw chocolate
½ cup coconut oil
3 tbsp coconut flour
2 tbsp raw honey (Vegan Hack: Replace Honey with Maple Syrup)
1 tsp pure vanilla extract

Method:

Use a large mixing bowl and combine the cashew butter, coconut flour, raw honey and vanilla extract and stir well until the ingredients are fully blended. Roll the mixture into approximately 10 oval shaped balls. Place the peanut butter balls on a parchment lined tray and freeze for 15 minutes, or until firm. Melt the chocolate and combine thoroughly with the coconut oil and set aside, momentarily. Remove the peanut butter cups from the freezer and dip into chocolate using a toothpick to completely cover. Return the chocolate dipped eggs to the parchment paper and place in the refrigerator for approximately 30 minutes, or until the chocolate shell has hardened.

  • ¾ cup cashew butter

  • ½ cup coconut oil
  • 3 tbsp coconut flour
  • 2 tbsp raw honey
  • 1 tsp pure vanilla extract
Instructions
  1. In a large mixing bowl, combine the cashew butter, coconut flour, raw honey and vanilla extract and stir until well combined.
  2. Use a spoon or wet hands to roll approximately 10 cup shaped cups/candies.
  3. Place candy on a plate lined with parchment paper and freeze for 15 minutes, or until firm.
  4. Melt the chocolate and mix with the coconut oil.
  5. Remove the cups from freezer and dip into chocolate using a toothpick and be sure the cups are completely covered.
  6. Return the chocolate dipped cups to the parchment paper and place in the refrigerator for approximately 30 minutes, or until the chocolate has set.
