Palak,methi and Paneer Rice

I always like to make different types of variety rice.These types of rice are very easy to make and tastes great with just a raita on side.I bought very fresh bunch of spinach and methi yesterday, and instead of preparing the same old palak paneer i made this rice.I didnot use any kind of masala like garam masala or biriyani masala as i wanted  the flavor of palak and methi bloom. 
Palak,methi and paneer rice
Ingredients::
 1 cup basmati rice
12 to 15 large leaves of fresh spinach (palak)
1 small bunch fresh methi leaves
1/2 cup sweet corn pearls
1/2 cup paneer pieces
1+1 green and dried red chilli
1 small onion chopped
1 tsp cumin seeds
1 tsp mustard seeds
1 small piece ginger grated
1 tsp turmeric powder
1 tsp coriander seed powder
1 Tbsp cilantro leaves
2 Tbsp thick curd 
Oil+ghee
Salt
Method:
Wash and chop the spinach and methi leaves coarsley,soak rice in water for 15 minutes.while the rice is soaking blanch and drain the spinach .Heat a thick bottomed pan with little oil and ghee,once hot add mustard and cumin seeds and let them splutter..Next add crushed ginger,cilantro, red, green chilli and fry for one minute.Now add the chopped onion and fry till it turns light brown and add the methi leaves and fry for 2 minutes.Once methi is cooked add sweet corn pearls,blanched spinach and cook for five minutes.Now add paneer pieces,turmeric powder,coriander seed powder and curd and fry till everything is cooked well together on low flame.Now add the rice,salt as required and fry for 2 minutes.Now add 11/2 cups of water + few drops of oil and cover the pan.cook on very low flame till done.
  
 Time : 30 minutes
