Orange, Cardamom and Pistachio Loaf

It was 10.40pm on a Saturday night, and what else would I be doing but baking for breakfast the following morning. I know #rocknroll. I absolutely love the taste/smell of cardamom, in breads, cakes and it goes particularly well in a beef stew. But I spied some pistachios earlier and knew immediately that I would pair them up with some cardamom and orange. We’ll be devouring this over coffee this morning whilst explaining the a one and a three year old (like my mother used to) that it’s far too good for children. I know I say this all the time but it’s ridiculously easy!

Put the following into a bowl:

110g caster sugar

110g self-raising flour

110g soft butter

50g chopped pistachios

1-2 tbsp milk

1 tsp ground cardamom

Zest of 1 medium orange

Use a wooden spoon to mix well. Grease and line a 2 lb loaf tin and preheat the oven to 180. Bake for 20 minutes or until a skewer comes out clean. See? I told you it was easy!
