I worked months on this recipe for the 2013 World Food Championships, a variant of my other Bolognese recipes that won prizes, and it was my first build, dubbed the 'signature' build of the Las Vegas competition. I used some different ingredients that brought out the flavors and enhanced the depth of this sauce, since I had just about an hour and a half to make a deep, creamy, tasty bolognese with apricot mustard pork bbq.

It was totally fabulous, I must admit, and I was shocked it didn't rate better than it did! Take the Original 10-Inch Wrap from Mission, for example (arguably the most ubiquitous wrap company, with products sold everywhere from big-box grocery stores to corner bodegas. There is also 580 mg of sodium in the wrap, while two slices of whole wheat bread usually range from 200 to 300 grams. You could argue that some Buttermilk Pork Chops & Sweet Apricot Glaze contains fewer calories than two slices of bread, which usually hover between 160 and 240 calories overall, such as Mission, which clocks in at 210 calories. But this is negligible as the deli man stuffs your wrap with a tuna salad worth an additional 375 calories. And here's the good news: At the lunch shop, you no longer need to starve yourself. Go all-in on real bread, which is what, confess it, you always wanted in the first place.
