Monday Munch | Vegetarian Food Diary | Part 4

It’s been a good while since we had a Monday Munch post, and a Bank Holiday Monday seems like a good time to get back into the swing of it!

Breakfast


Monday Munch | Vegetarian Food Diary | Part 4 At this time of the year I would usually be moving away from things like porridge for breakfast, but in Scotland we are still waking up to gray skies. A nice warm bowl of porridge sets me up nicely for a hard day at work, walking dogs in the rain!
This porridge is the Oats So Simple stuff which comes in pouches and takes 2 minutes in the microwave. I like to make mine using almond milk, and I like to add a little something to jazz it up a bit. This time I’ve added dried blueberries.
Lunch
Monday Munch | Vegetarian Food Diary | Part 4 For lunch I made a sort of tostado type concoction by heating a wrap in a frying pan to make it crispy. I filled it with chopped, courgettes, peppers, red onions and cheese. It was quick, easy and (relatively) healthy!
Dinner


Monday Munch | Vegetarian Food Diary | Part 4 Moving on from my healthy lunch to a not so healthy dinner! To be fair, I tried to make it as healthy as possible! My egg was boiled and my potato scone was grilled instead of fried. That counts for something right? The ‘sausages’ are Glamorgan sausages which are made of potato, cheese, leeks and breadcrumbs. They are so, so, so good!
Monday Munch | Vegetarian Food Diary | Part 4 For a snack I had a little packet of mixed nuts. They have a lot of calories but they are full of good fats, so I like to try and add nuts into my diet a couple of times a week. These ones are nice a plain. No salts or preservatives. 
I hope everyone has had a lovely Bank Holiday weekend. I’m super jealous of those of you who are getting sunshine right now!
