Mixed Vegetable Chutney

What makes a common breakfast or dinner like idly,dosa more interesting?According to me only the varieties in side dish. It is as important as the main dish itself.I am not into coconut that much an I hardly use it.I cook with coconut only if it is indispensable in the recipe.So needless to say I make chutneys with coconut rarely and instead I try to make chutney with vegetables itself.I find these kind of chutneys more flavorful,colorful,fragrant and nutritious too.This mixed vegetable chutney is one such experiment of mine and we liked it very much.With its vibrant yellow color and flavor it went very well the sponge dosas for dinner.Try and let me know how you liked it :)

Star ingredient-Onion and different colored bell peppers
Time-20 minutes
Serves-3
Ingredients:
1 large onion sliced
1 yellow bell pepper chopped coarsely
1 green bell pepper chopped coarsely
1 tomato chopped
2 teaspoons chopped cilantro
3 teaspoons gram dal
3 dried red chillies
1 teaspoon cumin seeds
Sesame oil
Salt
For tempering:
1 teaspoon mustard
10-12 curry leaves
1/4 teaspoon asafoetida
Method:
1.In a kadai add some sesame oil,once hot fry cumin seeds and gram dal till golden.Add chillies and saute for a minute.Add onions and fry till golden.

2.Next add the tomatoes along with vegetables and saute well for 5 minutes.Cool thoroughly and grind along with salt and cilantro.
Mixed vegetable chutney3.Add tempering ingredients to little oil,let them splutter and add to the ground chutney along with oil.Mix well and serve with idly or dosa.
Mixed vegetable chutneyNotes:
1.Use sesame oil for the better taste.
2,You can use vegetable like sweet pumpkin,chow chow or carrots along with bell pepper.
