Masala Chai Tea

The only Indian food that we ate very often is fish head curry, roti prata, murtabak, thosai and mutton curry, I don't really have much chance to sample other Indian cuisine or their dessert.   

I remembered once my boss brought back some Indian sweets but it was too sweet for me.  I must say I did enjoyed looking at the packaging with gold foil on it.  So pretty.Anyway, my first taste of Masala Chai tea was in Mustafa and I fell in love with it.  Totally yummy.  Despite not able to take caffeinated tea, I have a weakness for this one. 

Since I have some people in the house today, I decided to brew a pot to share.  

Masala Chai Tea

Findings: I will increase the cardamon pods to 6 as I like mine stronger.  I think adding condense milk instead of sugar will also makes it "thicker" in mouth feel.Source: The kitchnWhat you need:makes one 8 ounce serving

¾ cup water
3 whole green cardamom pods, smashed
1-2 thin slices fresh ginger
1” cinnamon stick
1 piece star anise
¾ cup milk
1½ tsp loose black tea leaves
Sugar to taste

Method:
Bring to boil water, cardamom, ginger, cinnamon stick and star anise in a pot.
Lower the heat and simmer for a few minutes until the mixture is fragrant.
Add the milk and tea leaves, and let it simmer for another minute.
Turn off the heat and let steep for 2 minutes.
Pour into a cup through a fine mesh sieve.  
Add sugar to taste.
