Mango Cup Cakes

Cup Cakes; who doesn't like cup cakes. These tiny little pieces of heaven, melting into your mouth is just to die for. And when we talk about summers,  we have to talk about Mangoes, so here is a tasty mouth-watering recipe of Mango Cup Cakes :)
Mango Cup Cakes
Servings : 6 Cupcakes
Preparation time: 15-20 mins
Baking time : 30 mins

Ingredients :

For the Cup cakes:

Milk : 100 ml
Sugar : 100 gms
Oil : 100 gms
Milk Powder : 50 gms
All purpose flour (Maida) : 200gms
Baking Soda : 1/2 tsp
Baking Powder : 1 tsp
Mango ripe essence : 1/4 tsp
Mango Pulp : 1-2 tbsp

For Frosting :

Whipped Cream : 1 cup
Mango Pulp : 1 tbsp
Yellow Color : 1/2 tsp

Method :

1. In a bowl sieve Maida, baking powder and baking soda. Set aside.

2. In a different bowl mix oil, sugar and milk. Mix well till sugar is completely dissolved. 
3. Now mix maida with the above mixture (step#2)
4. Add milk powder, mango essence and mango pulp. Mix it well.
5. Batter should be medium thick.
6. Fill this batter in cupcake moulds.
7. Microwave at Convection @ 200 for 30 mins.
8. Once the cupcakes come to a room temperature. Put frosting in a pipping bag and design your cupcakes.

Handy Notes

# If the batter is too thick add a little milk to it. 
# In case you don't have cupcake moulds, you can use aluminum moulds. 
# Fill the cupcakes batter to 2/3rd of the moulds.
