Lemon-butter Salmon

One thing I love about blogging with Jeanne is she always has something great to say.  A heartfelt something to write about a meal she might cook, like this and this.  Me on the other hand… I do a post about our delicious salmon dinner, and all I have to say about it is that it was… well… a delicious salmon dinner.

I guess I’ll just let today’s picture do the talking.

What I used:

  • wild Alaskan salmon
  • butter
  • lemons
  • organic garlic
  • organic broccoli
  • mixed organic greens
  • Jeanne’s ranch dressing
  • salt and pepper

In a sauce pan, saute 2 cloves of chopped garlic in butter on low for about 3-4 minutes.  Remove from heat and stir in the juice of 2 lemons.

Preheat oven to 350, and lightly coat the bottom of a glass baking dish with olive oil.  Place the salmon (skin side down) on the baking dish and pour lemon-butter sauce over it.

Bake for about 15 minutes until cooked through.  Everyone likes their salmon cooked differently, so keep an eye on your oven to make sure you get it how you want it.

Meanwhile, steam organic broccoli on medium heat until just tender.  I top with melted butter and a pinch salt before serving.

For the mixed greens, I kept it simple and just added the ranch and tossed all together before serving.

It’s a light meal… and with summer on the horizon… that’s the best kind!
