Leftover Rice Cutlets

A simple jhatpat recipe with leftover cooked rice. Enjoy it in rainy season with a hot cup of tea.
Leftover Rice Cutlets
Servings : 2 persons
Preparation time : 10 mins
Cooking time : 10 mins
Ingredients :
Leftover cooked rice : 1 cup
Gram flour (besan) : 2 tbsp
Capsicum (finely chopped) : 2 tbsp
Potato (Boiled and mashed) : 1
Coriander leaves : 2 tbsp
Ginger (finely chopped) : 1/2 tsp
Green chillies (finely chopped) : 1/2 tsp
Amchur powder : 1/2 tsp
Black pepper powder : 1/4 tsp
Salt : to taste
Oil : for shallow fry
Bread crumbs : For coating
Method:
1. Mash the cooked rice with your hands.
2. Add gram flour (besan), capsicum, potato, coriander leaves, ginger, green chillies, amchur powder, black pepper powder and salt. Mix them well. It should come to a binding consistency. If soggy you can add more gram flour (besan) or bread crumbs.
3. Put a little oil on your hands and make round shape of the above mixture (step#2) and press slightly to make a patty.
4. Coat the above patty into bread crumbs.
5. Shallow fry all the patties till light golden brown. 
6. Serve hot with ketchup.
7. Enjoy it with a hot cup of tea.

Handy notes:

# Do not mash the rice in blender or mixer, it will become soggy and will not taste good. Do it with your hands.
# You can add any vegetables according to your choice. 
# Can add garlic and onion.
